If you are looking to use egg replacements in our mixes, you can certainly use the Ener-G brand of egg replacer, or an equivalent brand. However, we love using ground flax seeds and water. In order to create this mixture, mix together 1 tablespoon ground flax seeds + 3 tablespoons water, for each egg. So, if the recipe calls for 2 eggs, you’ll mix together 2 tbsp. ground flax + 6 tbsp. water
